Sometimes you just want nacho cheese but don’t want all the added ingredients. Here is a way you can have it and know exactly what is in it. The best part about this recipe is that it is also 100% nondairy. So if you are hosting for a lactose intolerant friend or worry about what to serve your vegan friends here, is your answer.

Serving spicy “cheese” sauce along with the crispy plantain chips is a homerun. All the workings of a normally unhealthy comfort food but reworked into a vegan friendly and health conscious treat.

 

Crunchy Homemade Plantain Chips

Yes, you can buy plantain chips.  But not only are these baked plantain chips healthier, you will also know exactly what you are eating- plantains!

However, we would highly recommend using a mandoline if you have one.  Not only will it ensure that the chips are cut evenly but it will also save you lots of time.

Additionally, although these plantain chips will take a little time to prepare, they will keep extremely well. Simply put them in a resealable bag and you have one crispy treat for up to two weeks.  But we would be shocked if they last that long. They definitely never do in our home!

Description

A healthy and homemade snack of baked plantain chips served alongside a spicy vegan nacho cheese sauce. A zesty and flavorful crispy treat that’s also addicting!


Ingredients

Scale
  • 2 green plantains, sliced very thin
  • 1/4 tsp salt and pepper
  • 1 lime, zested and juiced.
  • 1 Tbsp olive oil
  • 1/2 Cup Vegan Cheese Sauce (Try this recipe for The Best Vegan Nacho Cheese Sauce!)

Instructions

  1. Preheat the oven to 400°F.
  2. Peel the plantains and slice them as thin as possible, about 1/8 inch. Use a mandolin for uniform results but a knife will work as well.
  3. In a bowl, place the olive oil, lime zest and juice, and salt & pepper.
  4. Place the plantain slices into the bowl and toss until all are lightly coated.
  5. Arrange the plantain slices in a single layer on a parchment paper lined baking sheet. You may need more than one or work in batches.
  6. Then, place plantain slices in the oven and let cook for 8-10 minutes until golden brown.
  7. While the plantains cook, prepare your cheese sauce.
  8. Finally serve the plantain chips alongside the cheese sauce for dipping. Enjoy!
  9. Leftover plantain chips can be stored at room temperature in a resealable bag and leftover cheese sauce can be stored in the refrigerator in an airtight container for up to a week.
