Brie Wrap

This wrap is another example of finding inspiration from delicious restaurants around NYC.  There was a little corner deli near the school that I used to teach at that I loved walking to and either getting a fresh sandwich, wrap, or maybe a soup during the colder months.  But usually I had to get a wrap that I had learned to love thanks to the recommendation of my brother-in-law.  He normally picked up two and I will admit I was tempted to do the same after I realized how incredible this wrap was.

Well fast forward a few years and a different public-school number, I decided we needed to recreate our own version since I am no longer able to grab one of the deli’s delicious wraps. However, we also took the chance to modify it for our own specific preferences.  I believe it turned out even better, probably because it can be made by my own two hands (or Steve’s!) and I know exactly what is in it.  Food always tastes better when you know exactly what it includes, in my opinion.

There is something about the combination of flavors coupled with the oozing brie cheese.  It just melts in your mouth. Then there is the addition of the sweet and aromatic raspberry vinaigrette layered on the fresh swiss chard and tomatoes.  Finally, you have the currants to add one more flavor and texture to this delectable wrap.  It all just works, even though it is quick and easy to put together.  And now, even though I can’t grab one during my lunch break, I can bring one from home that is just as delicious and it’s easier on my wallet too.  Who knows, maybe I will bring 2 next time!

Serves: 2 wraps
Ingredients
  • Wrap Ingredients:
  • 2 whole wheat wrap tortillas
  • 4-6 oz brie cheese, sliced in ¼ inch slices
  • 2 leaves of swiss chard, loosely chopped
  • 6-8 cherry tomatoes, halved
  • ½ Persian cucumbers, sliced thinly or ribboned
  • ¼ cup currants (or raisins)
  • Raspberry Vinaigrette Ingredients:
  • 10-12 fresh raspberries (or frozen)
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • 1 Tbsp dried basil
  • ½ tsp salt
Instructions
  1. Wash and slice all fresh veggies and the cheese.
  2. Combine all the ingredients for the vinaigrette into a blender or food processor and puree until incorporated completely. Set aside.
  3. In the center of a tortilla lay out your ingredients. Finish with a sprinkling of currants and a drizzle of the vinaigrette.
  4. Wrap the tortilla around the ingredients and fold in the bottom so you don’t lose any of the tasty morsels. Enjoy!
