Fresh Veggie Stackers

This is one of our go to recipes. We love making these on busy week nights as well as lazy Sundays. We don’t go out and buy things specifically for these too often. Most of the time we just see what we have on hand and start stackin. These are simple, fun and fresh. Serve them as an appetizer or as a bite sized salad for guests. I know this recipe seems pretty easy and basic but we really do get so much joy from these little things, and they change seasonally with what is available so they never get boring. Please go try these, but don’t go break the bank buying all the ingredients. See what you have and get creative.

 

Ingredients: (may vary with what you have on hand)

Cucumbers, sliced into circles

Radishes, sliced into circles

Tomatoes, Sliced thin

Avocados Pitted, peeled and sliced thin

Roasted Beets, sliced thin

Fresh herbs, washed and chopped

Cilantro

Basil

Dill

Cheeses sliced thin

Fresh Mozzarella

Aged Provolone

Crumbled Blue Cheese

Red pepper flakes

Black pepper

Lemon Juice

 

  1. Wash and Prepare all fresh vegetables and herbs. Slice cheese and beets
  2. Be Creative! Arrange into bite sized stacks. Stacking from large pieces to small to make it easily stacked.
  3. Garnish with fresh herbs, dried spices and/or lemon juice.
  4. Serve fresh
