Grilled Eggplant Napoleon

We first had these at an amazing restaurant in our neighborhood. However, Eggplant Napoleon is traditionally deep fried.  We wanted to create a healthier version.  All we can say is that these are out of sight.  Have you ever made something and thought to yourself that these are too good for them to be made here in this kitchen? This is what happened the first time we made these. They were just too good to be homemade. Please don’t get intimidated by the length of the ingredients list. It is mostly spices and if you don’t have something just leave it out or substitute it with something you do have on hand. Make these- they are amazing.

Ingredients
  • 1-2 Medium Eggplant Sliced into 1 inch thick circles
  • 1-2 Cups Baba Ganoush or Hummus
  • 2 Tomatoes, Diced Small
  • 2 small or 1 large Cucumber, Diced Small
  • 1 Roasted Pepper, Diced Small
  • 4 Cloves Garlic, Minced
  • 10-12 Pitted Kalamata Olives, Sliced Small with some juice
  • 1 Bunch Basil, Sliced Thin
  • Juice of 1 Lemon
  • 2 Tsp Coriander Powder
  • 2 Tsp Garlic Powder and more for seasoning eggplant.
  • 2 Tsp Dried Parsley
  • 2 Tsp Cumin
  • 1 Tsp Crushed Red Pepper and more for seasoning eggplant
  • 1 Tsp Dried Thyme
  • 1 Tsp Dried Rosemary
  • 1 Tsp Dried Oregano
  • 1 Tsp Smoked Paprika
  • 2 Tbsp. Olive Oil
  • Salt and Pepper to taste
Instructions
  1. Light grill, allow lighter fluid to burn off and charcoal to become hot.
  2. Wash and prepare all fresh vegetables as per instructions.
  3. In a large bowl, add the diced tomato, diced cucumber, diced onion, minced garlic, sliced olives and sliced basil. Add all dry spices as well. Then add the lemon juice and olive juice. Stir until well combined. Place in refrigerator until you are ready for it.
  4. Grill your eggplant medallions, Brush each side of the eggplants with a little olive oil and season with salt, pepper, garlic powder and red pepper. Flipping once or twice until both sides are cooked well.
  5. Once your eggplant is finished grilling, prepare your Napoleons. On a plate, place one eggplant medallion and spread with baba ganoush and 1 Tbsp. of the fresh vegetable mixture. Place another eggplant medallion on top of that and repeat the process.
  6. Garnish with more of the fresh vegetable mixture, basil and olives.
  7. Enjoy.
