When can a salad be a completely satisfying meal? When it has pasta in it! This fresh pasta salad will surprise you with the vibrant flavors that come from just a few ingredients. This dish is great for a side to a larger meal but it can also be a meal by itself. The juicy pear, fragrant fennel and delicate dill combined with the crunchy arugula and tender pasta will delight your family and guests. Enjoy
- 1 Package Gluten Free Pasta (Cooked)
- 1 Bunch Arugula
- 1 Fennel Bulb (Chopped)
- 2 Pears (Sliced)
- ½ Radicchio (Sliced)
- 1 Cup Hazelnuts (Toasted)
- 1 Bunch Dill
- 1 Lemon (Juiced)
- Cook the pasta as per the package directions. Wash and prepare all of the fresh produce.
- In a dry skillet over medium heat toast the hazelnuts until skin starts to turn dark brown and they become fragrant (about 4-5 minutes).
- In a large bowl, combine all the ingredients and toss.
- Serve with a splash of lemon juice and a little oil if desired. We also love to add a sprinkle of red pepper for a little zest but that is completely up to your discretion.
