Brie Wrap

Serves: 2 wraps
- Wrap Ingredients:
- 2 whole wheat wrap tortillas
- 4-6 oz brie cheese, sliced in ¼ inch slices
- 2 leaves of swiss chard, loosely chopped
- 6-8 cherry tomatoes, halved
- ½ Persian cucumbers, sliced thinly or ribboned
- ¼ cup currants (or raisins)
- Raspberry Vinaigrette Ingredients:
- 10-12 fresh raspberries (or frozen)
- ¼ cup red wine vinegar
- ½ cup olive oil
- 1 Tbsp dried basil
- ½ tsp salt
- Wash and slice all fresh veggies and the cheese.
- Combine all the ingredients for the vinaigrette into a blender or food processor and puree until incorporated completely. Set aside.
- In the center of a tortilla lay out your ingredients. Finish with a sprinkling of currants and a drizzle of the vinaigrette.
- Wrap the tortilla around the ingredients and fold in the bottom so you don’t lose any of the tasty morsels. Enjoy!
