Pear and Fennel Pasta Salad

Ingredients
  • 1 Package Gluten Free Pasta (Cooked)
  • 1 Bunch Arugula
  • 1 Fennel Bulb (Chopped)
  • 2 Pears (Sliced)
  • ½ Radicchio (Sliced)
  • 1 Cup Hazelnuts (Toasted)
  • 1 Bunch Dill
  • 1 Lemon (Juiced)
Instructions
  1. Cook the pasta as per the package directions. Wash and prepare all of the fresh produce.
  2. In a dry skillet over medium heat toast the hazelnuts until skin starts to turn dark brown and they become fragrant (about 4-5 minutes).
  3. In a large bowl, combine all the ingredients and toss.
  4. Serve with a splash of lemon juice and a little oil if desired. We also love to add a sprinkle of red pepper for a little zest but that is completely up to your discretion.
