Roasted Garlic Scape Salsa

Ingredients
  • 6 Plum/Roma Tomatoes (Diced Small)
  • 1 Lime (Juiced)
  • 2 Jalapenos (Roasted, Diced Small)
  • 1 Bunch Garlic Scapes (about 12) (Roasted, Chopped Thinly)
  • 4 Green Onions (Sliced)
  • 1 Small Can Green Chilis
  • 2 Chipotles in Adobo Sauce (Chopped)
  • 1 Bunch Cilantro (Chopped)
  • Salt and Pepper to Taste
Instructions
  1. Preheat the oven to 400 degrees.
  2. Trim the fresh garlic scapes by cutting off the top just below the bulb.
  3. Cut the stems off the jalapenos and cut in half. (Remove the seeds if you don’t want it too spicy.)
  4. Arrange garlic scapes and jalapenos on a baking sheet coated with a layer of olive oil.
  5. Place in the oven for 10-15 minutes until peppers become soft and scapes begin to brown.
  6. Wash and prepare all ingredients.
  7. In a large bowl combine all ingredients.
  8. Stir to combine and chill for at least an hour.
  9. Salsa enhances in flavor as it sits. Make it a day ahead if time allows.
  10. Enjoy.
