Pomegranate & Gooseberry Chia Jam

Serves: 2 cups
- ¾ Cup Gooseberries
- 1 Cup Pomegranate Arils
- 3 Tbsp Chia Seeds
- 2 Tbsp Agave Nectar (or to taste)
- 1 Tbsp Lemon Juice
- Remove the gooseberries from their husks and wash thoroughly. Remove arils from the pomegranate.
- Place all of the ingredients into a blender and puree until well combined.
- Pour into a jar and refrigerate for at least one hour to allow the chia to gelatinize.
- Serve on toast, cookie filling or anything you desire.
