Over medium heat cover the bottom of a high sided pan with a thin layer of olive oil and stirring often sauté onion and garlic until onion begins to become translucent and aromatic about 3 minutes.
Add the tomato paste and stir constantly for 1-2 minutes.
Next add tomatoes and dry spices.
With your cooking utensil, crush and break apart tomatoes to form bite sided chucks.
Simmer sauce for 20-25 minutes or longer if desired until onions are soft and all ingredients have incorporated well. Sauce will thicken some.
Serve immediately with your favorite pasta or save in refrigerator for up to a week or freeze for later use.
