Hot & Smokey Lentil Hummus

Ingredients
  • 1 Cup Dry Red Lentils
  • 3 Tbsp Tahini
  • 1 Lemon (Juiced)
  • 1 Clove Fresh Garlic
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • ½ tsp Ground Cumin
  • 3-4 Chipotle Peppers in Adobo Sauce
  • 1 Drop Liquid Smoke
  • 2 Tbsp Olive Oil
Instructions
  1. Cook the lentils as per the directions on the package.
  2. Place the cooked, drained lentils into a blender with the rest of the ingredients.
  3. Blend until very smooth.
  4. If the hummus is too dry you can gradually add a small amount of vegetable stock while you blend it until it reaches the perfect creamy consistency.
