Jerk Jackfruit Stuffed Plantains

Ingredients
  • 1 Can Young Jackfruit (Pulled apart into strips)
  • 4 Ripe Yellow Plantains (Peeled)
  • 1 15oz Can Black Beans (Drained and rinsed)
  • 1 Onion (Diced)
  • 1 Jalapeño (Diced)
  • Cherry Tomatoes (Quartered)
  • Cilantro
  • Avocado
  • Vegan parmesan (optional garnish)
  • 2 tbsp Spice mix (see below or you can also use a store bought jerk blend seasoning)
  • Spice mix:
  • 1 Tbsp Garlic Powder
  • 2 tsp Cayenne Pepper
  • 2 tsp Onion Powder
  • 2 tsp Dried Thyme
  • 2 tsp Dried Parsley
  • 1 tsp Salt
  • 1 tsp Sugar
  • 1 tsp Paprika
  • ¼ tsp Cinnamon
  • ½ tsp Crushed Red Pepper
  • ½ tsp Black Pepper
  • ½ tsp Ground Nutmeg
Instructions
  1. Preheat the oven to 400 degrees.
  2. Prepare all of the fresh ingredients as directed above.
  3. Place the peeled plantains on a foil lined baking sheet. Bake for 15 minutes. Flip the plantains and bake for an additional 15 minutes.
  4. Meanwhile, In a deep frying pan over medium high heat, sauté the onions and garlic for 2-3 minutes. Stir frequently.
  5. Add the shredded jackfruit and spice mix to the pan. Sauté for an additional 4-5 minutes. Stirring frequently.
  6. Add the beans to the pan and stir to combine.
  7. Once the plantains are cool enough to touch, slice the plantains down the middle. Be careful not to go all the way through the plantain though. Slightly open each plantain at the cut. It should resemble a canoe or boat. 
  8. Fill with the jackfruit mixture. Be sure to stuff that as full as you can.
  9. Bake for 5 minutes.
  10. Garnish with fresh cilantro, jalapeños, tomatoes, avocados and vegan parmesan, if desired.
