Homemade Fries with Creamy Horseradish Drizzle

Ingredients
  • 4-5 Russet Potatoes (Cut into Fries)
  • 1 Cup Fresh Horseradish (Peeled and Chopped)
  • ⅔ Cup Raw Cashews (Boiled)
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Mustard (your choice)
  • ¼ tsp Salt
  • ¼ tsp Black Pepper
  • 1 Cup Cashew Water
Instructions
  1. Wash and prepare all fresh produce as directed above.
  2. After cutting the potatoes into fries, soak them in cold water for 7-10 minutes. This removes excess starch.
  3. While the potatoes are soaking, boil the cashews for 10 minutes. Reserve at least 1 cup of the boiling water when draining the cashews. This will be used in the sauce.
  4. Cook the fries. We used an air fryer, for 20 minutes. If you do not have an air fryer you can bake or even deep fry your fries it’s your choice. Just keep in mind the crispier the better.
  5. Make the sauce. Place all of the sauce ingredients into a high speed blender, and blend on high until extra smooth and creamy.
  6. Once the fries have finished cooking, place them on a serving plate and drizzle the sauce onto the fries.
  7. Garnish with fresh herbs if desired.
