Wash and prepare all produce. We recommend a mandolin for shredded the sweet potato if you have one because it is much faster. But if you don’t have one, either a julienne peeler or cheese grater will get the job done just at a slower pace.
Add the olive oil to a large deep frying pan and heat over medium/high heat. Add the sweet potato, onion, and jalapeno.
Cook for about 5 minutes stirring frequently until the onions are translucent and the sweet potato is slightly browned.Next add the bbq sauce to the pan.
Stir until thoroughly combined.
Reduce the heat to medium/low and cook for about 10-12 minutes, stirring occasionally.
Remove from the heat and scoop about ½ cup of the sweet potato mixture onto the sliced buns. Top with the shredded red cabbage and cilantro. Serve warm and enjoy!
