Instant Pot Split Pea BBQ

Serves: 4 servings
- 1 Cup Dry Split Peas (Rinsed)
- 3 Cups Water
- 1 Medium Red Onion (Diced)
- 1 Medium Yellow Bell Pepper (Diced)
- 2 Cloves Garlic (Minced)
- 1 ½ Cups BBQ Sauce (Homemade version HERE!)
- Make the BBQ sauce as per THIS recipe or use a preferred store bought BBQ sauce.
- Place the rinsed peas into the Instant Pot, along with the water.
- Close the vent to “sealing” and set the Instant Pot to pressure cook “normal” for 1 minute.
- After it has finished cooking, release the pressure and open the top. The peas should be easy to bite but not mushy.
- Drain the peas and set aside.
- Wash the inside of the instant pot. Add a Tbsp of oil as well as the onion, garlic and peppers. Set to sauté “normal”.
- Stir frequently until it is fragrant and the onions are translucent.
- Add the peas as well as the sauce to the instant pot and stir constantly until it has thickened to your desired consistency.
- Serve on a bun, in a wrap, or over the grain of your choice or rice.
