Delicata Squash and Quinoa Salad

Ingredients
  • 1 Delicata Squash (Sliced Thick and Deseeded)
  • 1 Cup Dry Quinoa (Cooked as Per Directions on Package)
  • 10-12 Brussels Sprouts (Shaved or Thinly Sliced)
  • 3 Tbsp Pepitas
  • 3 Tbsp Dry Currents
  • Mixed Greens
  • Micro Greens
Instructions
  1. Cook the quinoa as directed at the package and allow to cool slightly before using.
  2. Preheat the oven to 400 degrees Fahrenheit.
  3. Prepare the fresh ingredients as directed.
  4. Place the sliced squash onto a baking sheet that has been prepared with a thin layer of oil.
  5. Roast the squash for 10-15 minutes on each side.
  6. Arrange the greens and micro greens on a platter. Toss the cooked quinoa into the greens.
  7. Place the roasted squash on top of the greens.
  8. Garnish the sprinkles of pepitas and currents.
