Add the millet and paprika and stir to combine. Allow to cook stirring constantly for 2 minutes.
Add the heated vegetable stock to the pot and stir to incorporate. Cover and allow to simmer for approx. 20 minutes or until all of the liquid has absorbed.
Fluff the millet with a fork and add the peas. Stir to combine.
Serve immediately with the gilled tofu.
