Raspberry Limeade “Jello” Shots

Since I am coming up on 40 years on this planet, I have long passed the time when Jell-O shots were a primary alcoholic option. That being said, these raspberry limeade jello shots raise the bar and in my opinion, could almost be considered gourmet.

Being able to customize these to whatever flavor you want is a major plus. Whether it is your favorite bottled juice or freshly squeezed right from fresh fruit, this recipe will work.

The fact that they are completely gelatin free is the most important part for us. Being able to make a recipe like this and not use gelatin is not only health conscious but it is also fun.

The secret ingredient is agar agar.  Which is a powder obtained from algae. When it is dissolved and boiled into any liquid it will become solid when it cools. We use this amazing stuff a lot when we make our sliceable nut cheeses.

Now I will admit, if you are going to make two layers like we did, this recipe is time consuming. So, if you do not have a lot of time before serving you can always make a single flavor and they will be just as good.

I cannot recommend these fun raspberry limeade “jell-o” shots enough. They are completely customizable, fun to make and vegan. Raise some eyebrows at the next gathering you have. They are delicious and will spark some great conversations even if your guests are no longer in their twenties.

Raspberry Limeade Jello Shots

Ingredients

Scale
  • 2 Cups Raspberry Lemonade
  • 1 Cup Dry Gin
  • 2 Tbsp Agave Nectar
  • 4 tsp Agar Agar Powder
  • 8 Limes (Juiced) (More For Garnish)
  • 1012 Fresh Raspberries (Garnish)
  • Ice trays or molds

Instructions

  1. Wash and Prepare all fresh produce. Juice the limes and strain out any pulp.
  2. In a small bowl mix 2 tsp of the agar agar powder with a ½ cup of the lemonade and stir to combine well. This will prevent clumping.
  3. In a medium sauce pan bring the rest of the lemonade to a slight boil and pour in the agar powder mixture. Allow to simmer for 30 seconds stirring continuously to combine.
  4. Remove from heat. Add half of the gin and pour into ice trays or molds.
  5. Place in the refrigerator for at least 2 hours but we recommend 4 hours.
  6. To make the lime juice layer, add ½ cup of the lime juice to 2 tsp of agar agar powder and mix to prevent clumping. Bring the rest of the juice along with the agave nectar to a slight boil. Pour in the agar mixture and simmer for 30 seconds stirring continuously.
  7. Remove from heat and add the rest of the gin. Pour on top of the now solid first layer.
  8. Let this set in the refrigerator for another 2-4 hours.
  9. Remove from trays and serve with fresh raspberries.
  10. Enjoy!
