Description
Crispy, sweet and spicy these Air Fryer Sesame Shiitake Mushrooms have it all. Well except lots of oil! A guilt free and DELICIOUS vegan side or appetizer!
Ingredients

- 2 Tbsp. Flour (Gluten free, if needed)
- 1 Flax Egg (1 tbsp flax meal, 3 tbsp water)
- 1 Large Package of Mushrooms (Cut into bite-sized pieces)
- 2 Green Onions (Chopped for Garnish)
Sauce:
- 1 Tbsp Sesame Oil
- 1Tbsp Rice Vinegar
- 3 Tbsp Brown Sugar
- ¼ Cup Soy Sauce (Or Liquid Aminos)
- 2 Tbsp Water
- ½ Tbsp Arrowroot Flour (also called Arrowroot Starch)
- 2 Cloves Garlic (Minced)
- 1 Inch Piece of Fresh Ginger (Grated)
- 1 Tbsp Sesame Seeds (+ more for garnish)
Instructions
- Wash and chop the mushrooms and green onions. Next, mince the garlic and grate the ginger. Set aside.
- In a small bowl combine the flour and the flax egg, whisk to combine. In another bowl, combine the ingredients for the sauce and whisk to combine thoroughly.
- Set the air fryer to 400°F and preheat for 3 minutes.
- In a large bowl, toss the mushrooms with the flax egg and flour mixture.
- Working in batches, if needed, fry the mushrooms in the air fryer until they are very crispy. Approximately 10 minutes.
- After all of the mushrooms have been fried add them to a frying pan, over high heat. Allow pan to heat up for at least a minute.
- Next pour the sauce mixture over the mushrooms. Be careful because it could splatter.
- Mix the mushrooms around the pan, making sure they are all coated with the sauce.
- Cook for about 1 minute to allow the sauce to reduce some.
- Remove from the heat and garnish with more sesame seeds and green onion, if desired.
- Serve immediately and enjoy!
- Leftovers can be refrigerated for up to 3 days. However, they are always better the day of!
