Ingredients

Scale
  • 2 Tbsp. Flour (Gluten free, if needed)
  • 1 Flax Egg (1 tbsp flax meal, 3 tbsp water)
  • 1 Large Package of Mushrooms (Cut into bite-sized pieces)
  • 2 Green Onions (Chopped for Garnish)

Sauce:

  • 1 Tbsp Sesame Oil
  • 1Tbsp Rice Vinegar
  • 3 Tbsp Brown Sugar
  • ¼ Cup Soy Sauce (Or Liquid Aminos)
  • 2 Tbsp Water
  • ½ Tbsp Arrowroot Flour (also called Arrowroot Starch)
  • 2 Cloves Garlic (Minced)
  • 1 Inch Piece of Fresh Ginger (Grated)
  • 1 Tbsp Sesame Seeds (+ more for garnish)

Instructions

  1. Wash and chop the mushrooms and green onions. Next, mince the garlic and grate the ginger. Set aside.
  2. In a small bowl combine the flour and the flax egg, whisk to combine. In another bowl, combine the ingredients for the sauce and whisk to combine thoroughly.
  3. Set the air fryer to 400°F and preheat for 3 minutes.
  4. In a large bowl, toss the mushrooms with the flax egg and flour mixture.
  5. Working in batches, if needed, fry the mushrooms in the air fryer until they are very crispy. Approximately 10 minutes.
  6. After all of the mushrooms have been fried add them to a frying pan, over high heat. Allow pan to heat up for at least a minute.
  7. Next pour the sauce mixture over the mushrooms. Be careful because it could splatter.
  8. Mix the mushrooms around the pan, making sure they are all coated with the sauce.
  9. Cook for about 1 minute to allow the sauce to reduce some.
  10. Remove from the heat and garnish with more sesame seeds and green onion, if desired.
  11. Serve immediately and enjoy!
  12. Leftovers can be refrigerated for up to 3 days. However, they are always better the day of!
