Raspberry Limeade Jello Shots

Ingredients

  • 2 Cups Raspberry Lemonade
  • 1 Cup Dry Gin
  • 2 Tbsp Agave Nectar
  • 4 tsp Agar Agar Powder
  • 8 Limes (Juiced) (More For Garnish)
  • 1012 Fresh Raspberries (Garnish)
  • Ice trays or molds

Instructions

  1. Wash and Prepare all fresh produce. Juice the limes and strain out any pulp.
  2. In a small bowl mix 2 tsp of the agar agar powder with a ½ cup of the lemonade and stir to combine well. This will prevent clumping.
  3. In a medium sauce pan bring the rest of the lemonade to a slight boil and pour in the agar powder mixture. Allow to simmer for 30 seconds stirring continuously to combine.
  4. Remove from heat. Add half of the gin and pour into ice trays or molds.
  5. Place in the refrigerator for at least 2 hours but we recommend 4 hours.
  6. To make the lime juice layer, add ½ cup of the lime juice to 2 tsp of agar agar powder and mix to prevent clumping. Bring the rest of the juice along with the agave nectar to a slight boil. Pour in the agar mixture and simmer for 30 seconds stirring continuously.
  7. Remove from heat and add the rest of the gin. Pour on top of the now solid first layer.
  8. Let this set in the refrigerator for another 2-4 hours.
  9. Remove from trays and serve with fresh raspberries.
  10. Enjoy!
