- 2 Cups Raspberry Lemonade
- 1 Cup Dry Gin
- 2 Tbsp Agave Nectar
- 4 tsp Agar Agar Powder
- 8 Limes (Juiced) (More For Garnish)
- 10–12 Fresh Raspberries (Garnish)
- Ice trays or molds
Instructions
- Wash and Prepare all fresh produce. Juice the limes and strain out any pulp.
- In a small bowl mix 2 tsp of the agar agar powder with a ½ cup of the lemonade and stir to combine well. This will prevent clumping.
- In a medium sauce pan bring the rest of the lemonade to a slight boil and pour in the agar powder mixture. Allow to simmer for 30 seconds stirring continuously to combine.
- Remove from heat. Add half of the gin and pour into ice trays or molds.
- Place in the refrigerator for at least 2 hours but we recommend 4 hours.
- To make the lime juice layer, add ½ cup of the lime juice to 2 tsp of agar agar powder and mix to prevent clumping. Bring the rest of the juice along with the agave nectar to a slight boil. Pour in the agar mixture and simmer for 30 seconds stirring continuously.
- Remove from heat and add the rest of the gin. Pour on top of the now solid first layer.
- Let this set in the refrigerator for another 2-4 hours.
- Remove from trays and serve with fresh raspberries.
