Description

A versatile plant-based protein that’s perfect for tacos, burritos, and more. This spicy vegan tempeh sofritas recipe is healthy and satisfying!


Ingredients

  • 1 Poblano Pepper (Roasted, Peeled and Chopped)
  • 1 Red Onion (Peeled and Chopped)
  • 3 Cloves Garlic (Peeled)
  • 2 Plum Tomatoes (Chopped)
  • 1/2 Cup Packed Fresh Cilantro
  • 1 Jalapeño (Deseeded)
  • 3 Chipotle Peppers in Adobo Sauce
  • 2 Tbsp Adobo Sauce
  • 1 tsp Ground Cumin
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt
  • 1/2 Lime (Juiced)
  • 1/2 Cup Water
  • 2 Packages Tempeh (Crumbled)

Instructions

  1. Place the poblano pepper onto the stove burner. Turn the burner on high and carefully watch the pepper as the skin chars. Turn the pepper as needed until the whole pepper has charred.
  2. Peel the charred skin off the pepper and remove the seeds and quarter the remaining pepper.
  3. Add the roasted pepper to a food processor along with the onion, tomato, jalapeño, garlic, chipotle peppers with adobo sauce, dry spices, lime juice and water.
  4. Process until combined. Set aside.
  5. In a skillet over medium heat, add the crumbled tempeh and stir it occasionally until it is golden brown on all sides. Approx. 5 minutes.
  6. Next pour the puréed sauce into the pan and bring to a simmer.
  7. Allow to simmer, stirring occasionally for 7-10 minutes.
  8. Remove from heat and serve warm in your favorite taco, burrito, or nacho. Enjoy!
  9. Refrigerate any leftovers in an airtight container for up to 5 days or freeze for up to 3 months.
