Description
An easy open-faced sandwich with French and Italian influences. This Vegan Caprese Tartine includes fresh “mozzarella”, tomato, and basil on toasted sourdough bread.

- 8 Slices Bread (Sliced thin)
- 2 tsp Olive Oil
- 8 oz. Vegan Fresh Mozzarella
- 2 Medium Tomatoes (sliced thin)
- 1/4 Cup Fresh Basil
- 2 Tbsp Balsamic Reduction (optional)
Instructions
- Preheat the broiler if using. Prepare all of the produce as directed above.
- Place the sliced bread on a baking sheet and brush a small amount of olive oil on one side.
- Place the baking sheet under the broiler for 2-3 minutes. Keep an eye over it to insure it does not burn.
- Place 1-2 slices of “cheese” on each piece of toasted bread.
- Next place sliced tomato on top of the vegan mozzarella followed by a few basil leaves.
- Drizzle balsamic vinegar over each tartine (optional). Season with salt and pepper, if desired and enjoy!
- Leftover vegan mozzarella cheese can be refrigerated in an airtight container for up to a week.
