Description
A Scandinavian delicacy that is egg and dairy free. But don’t worry, this Vegan Norwegian Krumkake recipe tastes just like the original!
Ingredients

- 1 Cup Sugar
- 1/2 Cup Vegan Butter (Melted)
- 2 Flax Eggs
- ½ Cup Coconut Cream
- ½ Cup Almond Milk (We like to use 1 Cup of BetterHalf by Califia because it is a combination of both!)
- 1 1/2 Cup All-Purpose Flour
- 1 tsp Vanilla Extract
Instructions
- Using a wooden spoon or whisk, mix the sugar and melted butter in a large bowl.
- Next, add the flax eggs and stir to combine.
- Then, add the milk and stir until combined.
- Add the flour gradually, until all of the flour is incorporated.
- Lastly, add the vanilla extract.
- Prepare your iron by coating it with a small amount of oil or butter. Place the iron over medium heat and allow it to warm for 1-2 minutes. (We have a stovetop iron, but you may need to adjust slightly if you are using an electric iron.)
- Open the iron and dollop 1 tsp of batter onto the center of the krumkake iron. Close the iron immediately. Allow each side to cook for 10-15 seconds. Open the iron to see if it is to your preferred browning. (There is always a first pancake. But then you will get the hang of the timing).
- Using a fork and the krumkake cone roll the cookie off the iron and onto the cone. Once the cookie is on the cone set it on a cutting board to cool, while you start your next cookie cooking.
- Remove the krumkake from the cone as you brown the next cookie.
- Repeat steps 6-8 until the batter is done. This recipe will make approximately 50-60 krumkake.
- Once cooled store in a large storage container until ready to enjoy.
