Description

This easy vegan appetizer is ready in 5 minutes! The beautiful and mild Badger Flame Beets are topped with fresh greens, pepitas, sea salt, and balsamic vinegar. So healthy and delicious!


Ingredients

Scale
  • 1 Badger Flame Beet (Sliced Very Thin)
  • ½ Cup Microgreens
  • 1 Tbsp. Pepitas
  • 1 tsp. Balsamic Vinegar
  • A dash of Sea Salt

Instructions

  1. Wash the fresh produce very well. Trim the stem off the beet.
  2. Using a mandoline or a very sharp knife, slice the beet paper thin. (We highly recommend a mandoline if you have one!)
  3. Arrange the sliced beet onto a serving plate and top with pepitas, microgreens and sea salt.
  4. Drizzle lightly with balsamic vinegar.
  5. Serve and enjoy!!!
  6. Leftovers can be refrigerated for up to 5 days.


Notes

  • If you have extra sliced raw beet, it can also be enjoyed on a salad or on top of a grain bowl.
  • Additionally, if you want to add a little something extra this recipe for vegan fresh mozzarella will take this dish to a whole new level!
