Description

A simple homemade baba ganoush recipe featuring umami packed black garlic. It’s sweet and savory, perfect for dipping, and bound to impress!


Ingredients

Scale
  • 1 Large Eggplant (Halved)
  • 3 Cloves Black Garlic (+ 1 more Clove for Optional Garnish)
  • 3 Tbsp Tahini
  • ¼ Cup Olive Oil
  • 1/4 tsp Salt
  • 1/4 tsp Smoked Paprika
  • 1/2 tsp Cumin
  • 1/2 Lemon (Juice)
  • 1 Tbsp Fresh Parsley (Chopped, Garnish)
  • ½ tsp Sesame Seeds (Optional Garnish)

Instructions

  1. Preheat the oven to 450°F.
  2. Cut the eggplant in half lengthwise. Brush the cut sides with a little olive oil and place on a parchment paper-lined baking sheet. Place in the oven for 30-35 minutes or until the eggplant is very soft. 
  3. Allow the eggplant to briefly cool and then scoop out the flesh. Discard the skin. 
  4. Place the eggplant flesh along with the rest of the ingredients into a food processor. Pulse until well incorporated but still slightly chunky. 
  5. Chop the parsley and black garlic for garnish, if using. 
  6. Transfer the baba ganoush to a bowl and top with the optional garnish. 
  7. Serve with pita bread, chips,  or fresh cut veggies. Enjoy!
