A quick and easy plant-based appetizer, perfect for a summer BBQ. Tangy hearts of palm wrapped in zucchini ribbons and grilled to a smoky perfection. Healthy, delicious, and ready in 15 minutes flat!

1 Can Whole Hearts of Palm (14oz)
1 Large Zucchini (Sliced Thin Lengthwise)
1 Lemon (Sliced into Wedges for optional garnish)
1 Tbsp Nutritional Yeast
1 tsp Dried Thyme
1tsp Salt
Extra Virgin Olive Oil (For brushing wraps prior to grilling)
Paprika (Optional garnish)
Instructions
- Wash and slice the zucchini. Drain the hearts of palm and cut it into appropriate lengths for the width of the zucchini.
- One-by-one, season each slice of the zucchini with thyme, salt, and nutritional yeast, if using. Place a piece of the hearts of palm onto the seasoned side of the zucchini.
- Roll the zucchini around the palm heart tightly and affix with a toothpick.
- Light the grill to prepare the coals for cooking.
- Brush each roll with a small amount of olive oil.
- Grill for approximately 2 minutes and flip.
- Remove from the grill and garnish with paprika, if desired and serve with a lemon wedge.
- Serve and enjoy.
- Leftovers can be refrigerated for up to 5 days in an airtight container.
