Description

A quick and easy plant-based appetizer, perfect for a summer BBQ.  Tangy hearts of palm wrapped in zucchini ribbons and grilled to a smoky perfection. Healthy, delicious, and ready in 15 minutes flat!


Ingredients

1 Can Whole Hearts of Palm (14oz)

1 Large Zucchini (Sliced Thin Lengthwise)

1 Lemon (Sliced into Wedges for optional garnish)

1 Tbsp Nutritional Yeast

1 tsp Dried Thyme

1tsp Salt

Extra Virgin Olive Oil (For brushing wraps prior to grilling)

Paprika (Optional garnish)


Instructions

  1. Wash and slice the zucchini. Drain the hearts of palm and cut it into appropriate lengths for the width of the zucchini.
  2. One-by-one, season each slice of the zucchini with thyme, salt, and nutritional yeast, if using. Place a piece of the hearts of palm onto the seasoned side of the zucchini.
  3. Roll the zucchini around the palm heart tightly and affix with a toothpick.
  4. Light the grill to prepare the coals for cooking.
  5. Brush each roll with a small amount of olive oil.
  6. Grill for approximately 2 minutes and flip.
  7. Remove from the grill and garnish with paprika, if desired and serve with a lemon wedge.
  8. Serve and enjoy.
  9. Leftovers can be refrigerated for up to 5 days in an airtight container.
