A quick and easy plant-based and gluten-free appetizer that delivers big flavor. Tangy hearts of palm wrapped in zucchini and grilled for a savory and smoky bite.  Ready in 15 minutes, these vegan grilled zucchini wraps will be the hit of your next BBQ.

 

A Savory Summer Squash

Zucchini is one of our favorite things to grill.  It deliciously absorbs the smoky grill flavor and it is readily available this time of year. It also tastes great in a variety of recipes, such as Vegan Summer Squash Ceviche, in a Garlic Scape Vegan Frittata, or spiralized for a Vegan Huli Huli Zoodle Bowl

But our favorite quick and easy recipe for this seasonal staple are these Grilled Zucchini Wraps.  They are a spectacular appetizer to serve guests and they are completely plant-based.  That means you can eat several of them and not feel the least bit guilty!

 

What You Will Need for Grilled Zucchini Wraps

  • Hearts of Palm –  It’s best to get the canned whole palm variety because then you can easily cut the hearts of palm to the size that is best for your zucchini.
  • Zucchini – It will need to be ribboned for these wraps.  It can either be sliced very thin with a knife or use a mandoline for easy uniform slicing.
  • Lemon – Just a squeeze of lemon juice brings out all of the savory flavors in these wraps. Serve with wedges for an easy garnish.
  • Nutritional Yeast – A sprinkle of “nooch” or nutritional yeast adds a cheesy flavor to your app.  This is an optional ingredient but we highly recommend it.
  • Spices – Dried Thyme and Salt accompany the nutritional yeast when wrapping for a mild yet savory touch.  Then, Paprika can be added for a garnish and a pop of color, if desired.
  • Toothpicks or Skewers – The zucchini wraps can either be grilled on individual toothpicks for a cute finger food or you can stack multiple wraps on a skewer for efficiency.

 

Incredibly Quick & Easy

Once the ingredients are gathered, these wraps come together so easily. Simply cut the hearts of palm, wrap zucchini ribbons around it, and grill.  Presto. A tangy and smokey bite that is bursting with flavor!

They require about 10 minutes or so for prep and will take less than 5 minutes to grill. Flip the wraps once while grilling so they cook evenly, and then serve.  The wraps can be enjoyed warm or cold so don’t worry if they can’t be served immediately. All-in-all, a perfect 15-minute summer hors d’oeuvre.

Description

A quick and easy plant-based appetizer, perfect for a summer BBQ.  Tangy hearts of palm wrapped in zucchini ribbons and grilled to a smoky perfection. Healthy, delicious, and ready in 15 minutes flat!


Ingredients

Scale

1 Can Whole Hearts of Palm (14oz)

1 Large Zucchini (Sliced Thin Lengthwise)

1 Lemon (Sliced into Wedges for optional garnish)

1 Tbsp Nutritional Yeast

1 tsp Dried Thyme

1tsp Salt

Extra Virgin Olive Oil (For brushing wraps prior to grilling)

Paprika (Optional garnish)


Instructions

  1. Wash and slice the zucchini. Drain the hearts of palm and cut it into appropriate lengths for the width of the zucchini.
  2. One-by-one, season each slice of the zucchini with thyme, salt, and nutritional yeast, if using. Place a piece of the hearts of palm onto the seasoned side of the zucchini.
  3. Roll the zucchini around the palm heart tightly and affix with a toothpick.
  4. Light the grill to prepare the coals for cooking.
  5. Brush each roll with a small amount of olive oil.
  6. Grill for approximately 2 minutes and flip.
  7. Remove from the grill and garnish with paprika, if desired and serve with a lemon wedge.
  8. Serve and enjoy.
  9. Leftovers can be refrigerated for up to 5 days in an airtight container.
