Description

These savory Herb Crusted Kohlrabi Steaks are an easy and delicious way to enjoy delicate kohlrabi.  This earthy vegetable is caramelized and coated in crunchy breadcrumb and LOTS of fresh herbs.

23 Medium Kohlrabies (Peeled and Sliced)

1 Cup Gluten Free Bread Crumbs

2 Tbsp Flaxseed Meal

6 Tbsp Water

1 Small Bunch Fresh Thyme (Leaves Removed)

1 Small Bunch Fresh Sage (Leaves Minced)

1 Small Bunch Fresh Rosemary (Leaves Minced)


Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the flax “eggs”. In a small bowl, mix the flax seed meal with the water and set aside.
  3. Wash all herbs and prepare as directed above.
  4. Peel and slice the kohlrabi into ½ – ¾ inch discs.
  5. Add the freshly chopped herbs to the bread crumb and stir to combine.
  6. Coat a baking sheet with a thin layer of oil.
  7. One by one, dip the kohlrabi steaks first into the flax “eggs” then into the bread crumb and herb mixture. Make sure that the kohlrabi is almost completely covered with bread crumb. We like to sprinkle extra on top for extra crispiness!
  8. Place the “steaks” on the baking sheet and bake for 25-35 minutes, depending on how brown you want them.
  9. Serve over a grain and maybe with a drizzle of tahini or your own favorite creamy sauce.
  10. Serve warm and enjoy!
  11. Leftovers can be refrigerated for up to 5 days and reheated.

Notes

  • We recommend reheating your leftovers in the oven to keep the breadcrumb crispy.
