Kohlrabi is a nutritious vegetable that can be prepared in a multitude of ways but there is nothing better than roasted and caramelized kohlrabi coated in a crispy breadcrumb crust. These vegan Herb Crusted Kohlrabi Steaks are deliciously indulgent yet a healthy alternative to a meat-centered meal.

 

A Versatile Vegetable

Vegetables are so versatile. There are countless ways you can use them. In this unique recipe they take a supreme role on your plate. These Herb Crusted Kohlrabi Steaks are simply irresistible!

Kohlrabi is also called a German Turnip and it is in the cabbage family. You can use kohlrabi in countless ways-

  • Raw, like in this crunchy Spicy Kohlrabi Slaw
  • Puréed into a creamy soup
  • Fried like a fritter

Perfectly Crispy Kohlrabi Steaks

One can simply slice and roast a kohlrabi as is, but we decided to try coating our “steaks” with a light gluten free breadcrumb and LOTS of fresh herbs. The roasting combined with the crunch of the breadcrumb was just what we were looking for on a cool night.

These Herb Crusted Kohlrabi Steaks are perfectly caramelized thanks to the extended roasting time. But then you get the crunch of the herby breadcrumb. I really can’t even describe how GOOD these are. But I think the pictures speak for themselves- pure roasted veggie goodness.

 

Serving Suggestions

Serve you “steaks” alongside quinoa, rice, or any other grain with a fresh green salad for a light and healthy meal. We also love to drizzle this Lemongrass Brazil Nut Cream Sauce over the kohlrabi but you might also enjoy The Best Vegan Blue Cheese Dressing or Classic Tofu Sour Cream. Any ludicrous and creamy sauce, even tahini, will perfectly contrast the crispy kohlrabi- so good!

However, no matter what you serve alongside these Herb Crusted Kohlrabi Steaks, the true star will be the root veggie. Enjoy!

Description

These savory Herb Crusted Kohlrabi Steaks are an easy and delicious way to enjoy delicate kohlrabi.  This earthy vegetable is caramelized and coated in crunchy breadcrumb and LOTS of fresh herbs.


Ingredients

23 Medium Kohlrabies (Peeled and Sliced)

1 Cup Gluten Free Bread Crumbs

2 Tbsp Flaxseed Meal

6 Tbsp Water

1 Small Bunch Fresh Thyme (Leaves Removed)

1 Small Bunch Fresh Sage (Leaves Minced)

1 Small Bunch Fresh Rosemary (Leaves Minced)


Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the flax “eggs”. In a small bowl, mix the flax seed meal with the water and set aside.
  3. Wash all herbs and prepare as directed above.
  4. Peel and slice the kohlrabi into ½ – ¾ inch discs.
  5. Add the freshly chopped herbs to the bread crumb and stir to combine.
  6. Coat a baking sheet with a thin layer of oil.
  7. One by one, dip the kohlrabi steaks first into the flax “eggs” then into the bread crumb and herb mixture. Make sure that the kohlrabi is almost completely covered with bread crumb. We like to sprinkle extra on top for extra crispiness!
  8. Place the “steaks” on the baking sheet and bake for 25-35 minutes, depending on how brown you want them.
  9. Serve over a grain and maybe with a drizzle of tahini or your own favorite creamy sauce.
  10. Serve warm and enjoy!
  11. Leftovers can be refrigerated for up to 5 days and reheated.

Notes

  • We recommend reheating your leftovers in the oven to keep the breadcrumb crispy.
