Description

An easy plant-based option for your next BBQ. These vegan Portobello Grill Packs are tasty, transportable, and customizable! So easy and so good!


Ingredients

Scale
  • 4 Portobello Mushrooms (Sliced)
  • Baby Potatoes (Sliced thin)
  • Carrots (Peeled and Sliced)
  • Sweet Peppers (Sliced)
  • 1 Jalapeño (Sliced)
  • Garlic Cloves

Herb Mix

  • 2 tsp Dried Thyme
  • ¼ tsp Salt
  • ¼ tsp Pepper
  • 1 Lemon (Juiced)
  • ¼ Cup Olive oil

Garnish:

  • 10 Chives (Sliced)
  • 5 Sprigs of Fresh Thyme (Stems removed)
  • 2 Green Onions (Sliced)

Other: 

  • Tin Foil

Instructions

  1. Wash and prepare all the fresh produce. Tear off several large pieces of tin foil.
  2. In a small container combine the ingredients for the herb mix and stir.
  3. In the center of each piece of tin foil arrange the vegetables.
  4. Pour a small amount of the herb mix over the vegetables, about 1-2 tsp.
  5. Close the tin foil over the vegetables. Make sure there is a secure seal with the foil.
  6. Place the tin foil packs over a hot grill or even the hot coals of a bon fire.
  7. Let cook for 15-20 minutes depending on the temperature of the coals.
  8. Serve each pack and garnish with chives, thyme and green onions. Enjoy!
  9. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days.
