Ingredients

- 4 Portobello Mushrooms (Sliced)
- Baby Potatoes (Sliced thin)
- Carrots (Peeled and Sliced)
- Sweet Peppers (Sliced)
- 1 Jalapeño (Sliced)
- Garlic Cloves
Herb Mix
- 2 tsp Dried Thyme
- ¼ tsp Salt
- ¼ tsp Pepper
- 1 Lemon (Juiced)
- ¼ Cup Olive oil
Garnish:
- 10 Chives (Sliced)
- 5 Sprigs of Fresh Thyme (Stems removed)
- 2 Green Onions (Sliced)
Other:
- Tin Foil
Instructions
- Wash and prepare all the fresh produce. Tear off several large pieces of tin foil.
- In a small container combine the ingredients for the herb mix and stir.
- In the center of each piece of tin foil arrange the vegetables.
- Pour a small amount of the herb mix over the vegetables, about 1-2 tsp.
- Close the tin foil over the vegetables. Make sure there is a secure seal with the foil.
- Place the tin foil packs over a hot grill or even the hot coals of a bon fire.
- Let cook for 15-20 minutes depending on the temperature of the coals.
- Serve each pack and garnish with chives, thyme and green onions. Enjoy!
- Leftovers can be stored in an airtight container in the refrigerator for up to 5 days.
