Description

This Roasted Tomato Sheet Pan Pomodoro is full of flavor and comes together with VERY little effort in 30 minutes and with only 5 ingredients! It’s healthy, easy, and delicious!


Ingredients

Scale

3 Quarts Cherry Tomatoes

2 Shallots (Quartered)

1 Head of Garlic (Peeled)

Fresh Thyme

Extra Virgin Olive Oil

Salt and Pepper (To taste)


Instructions

  1. Preheat the oven to 400°F.
  2. Wash all fresh produce. Peel and quarter the shallots and peel the garlic. Cut larger cloves of garlic in pieces if necessary. Separate stems of fresh thyme.
  3. Coat a baking sheet pan with a thin layer of oil.
  4. Arrange the whole tomatoes, quartered shallots, garlic cloves, and thyme stems on the pan evenly. Sprinkle with salt and fresh ground pepper to your liking.
  5. Bake for 20-30 minutes, or until tomatoes are slightly brown on top and the shallots and garlic are tender from the juices.
  6. Serve immediately with rice, pasta, pizza or polenta. You can also cool and store in the freezer (for up to 3 months) or refrigerator (up to 5 days) for later use.
