This Roasted Tomato Sheet Pan Pomodoro is full of flavor and comes together with VERY little effort in 30 minutes and with only 5 ingredients! It’s healthy, easy, and delicious!

3 Quarts Cherry Tomatoes
2 Shallots (Quartered)
1 Head of Garlic (Peeled)
Extra Virgin Olive Oil
Salt and Pepper (To taste)
Instructions
- Preheat the oven to 400°F.
- Wash all fresh produce. Peel and quarter the shallots and peel the garlic. Cut larger cloves of garlic in pieces if necessary. Separate stems of fresh thyme.
- Coat a baking sheet pan with a thin layer of oil.
- Arrange the whole tomatoes, quartered shallots, garlic cloves, and thyme stems on the pan evenly. Sprinkle with salt and fresh ground pepper to your liking.
- Bake for 20-30 minutes, or until tomatoes are slightly brown on top and the shallots and garlic are tender from the juices.
- Serve immediately with rice, pasta, pizza or polenta. You can also cool and store in the freezer (for up to 3 months) or refrigerator (up to 5 days) for later use.
