There is NOTHING better than a quick dinner that can easily be prepared on a weeknight, especially during the busy time of back to school.  This Roasted Tomato Sheet Pan Pomodoro is full of flavor and comes together with VERY little effort in 30 minutes and with only 5 ingredients!


The Key Ingredient – TOMATOES!

THIS is the time for tomatoes.  If you love a light and healthy marinara sauce, you will go wild for this sheet pan pomodoro.  It’s made with fresh tomatoes which are plentiful this time of year along with just good basic ingredients.  Here is precisely what you will need…

Ingredients for Roasted Tomato Sheet Pan Pomodoro Sauce:

  1. Fresh tomatoes (We used colorful cherry tomatoes)
  2. Garlic
  3. Shallots
  4. Extra Virgin Olive Oil
  5. Fresh Thyme

Chances are, you may only need to pick up 2 or 3 ingredients at the store- also a win for busy people!


Quick & Easy

But the best part about this recipe?!  It’s almost entirely hands-off! Simply place your ingredients (tomatoes, garlic, shallots, and thyme) on a sheet pan, drizzle with olive oil and ROAST!

Once the ingredients are roasty-toasty, garnish with lots of fresh basil if desired—and DONE! So incredibly easy. We will probably be making this sauce multiple times this month!

You can use this pomodoro sauce over any pasta noodle. We used chickpea gluten free pasta.  We also recommend lots of vegan parmesan on top!  But feel free to use milk-based parmesan if you choose. Of course, you can also use this versatile pomodoro sauce over rice, grains, polenta, or even for a pizza sauce.

3 Quarts Cherry Tomatoes

2 Shallots (Quartered)

1 Head of Garlic (Peeled)

Fresh Thyme

Extra Virgin Olive Oil

Salt and Pepper (To taste)


  1. Preheat the oven to 400°F.
  2. Wash all fresh produce. Peel and quarter the shallots and peel the garlic. Cut larger cloves of garlic in pieces if necessary. Separate stems of fresh thyme.
  3. Coat a baking sheet pan with a thin layer of oil.
  4. Arrange the whole tomatoes, quartered shallots, garlic cloves, and thyme stems on the pan evenly. Sprinkle with salt and fresh ground pepper to your liking.
  5. Bake for 20-30 minutes, or until tomatoes are slightly brown on top and the shallots and garlic are tender from the juices.
  6. Serve immediately with rice, pasta, pizza or polenta. You can also cool and store in the freezer (for up to 3 months) or refrigerator (up to 5 days) for later use.
  7. Most importantly… Enjoy!!
