Description

This chilled vegan peach soup is perfect for a hot summer day. Made with peaches, tomatillos, cucumber, lime, basil, jalapeño, and it also packs a punch!


Ingredients

Scale

5 Peaches (Pits Removed)
810 Tomatillos (Husks Removed)
1 Cucumber (Peeled)
1 Jalapeño (Stems and Seeds Removed)
3 Tbsp Lime Juice
1 Bunch Basil (Reserve a Sprig or Two for Garnish)
3 tsp Agave Nectar
2 Tbsp Olive Oil
Salt and Pepper to Taste
Hemp Hearts (For Garnish, if desired)

Crema: 
1/2 Cup Plain Non-Dairy Yogurt
2 Tbsp Lime Juice
1 tsp Agave Nectar


Instructions

  1. Wash and prepare all of the fresh ingredients, as per instructions above. Make sure to wash the tomatillos very well to remove any sticky residue.
  2. Place the gazpacho ingredients into a high speed blender and blend on high until very smooth. Add a small amount of water if the gazpacho is too thick.
  3. Season with salt and pepper.
  4. In a bowl, whisk together the crema ingredients.
  5. Chill both the gazpacho and the lime crema in the refrigerator for at least an hour prior to serving.
  6. Serve the gazpacho with a dollop of the prepared crema and garnish with fresh basil and optional hemp hearts, if using. Enjoy!
