Description
This chilled vegan peach soup is perfect for a hot summer day. Made with peaches, tomatillos, cucumber, lime, basil, jalapeño, and it also packs a punch!
Ingredients

5 Peaches (Pits Removed)
8–10 Tomatillos (Husks Removed)
1 Cucumber (Peeled)
1 Jalapeño (Stems and Seeds Removed)
3 Tbsp Lime Juice
1 Bunch Basil (Reserve a Sprig or Two for Garnish)
3 tsp Agave Nectar
2 Tbsp Olive Oil
Salt and Pepper to Taste
Hemp Hearts (For Garnish, if desired)
Crema:
1/2 Cup Plain Non-Dairy Yogurt
2 Tbsp Lime Juice
1 tsp Agave Nectar
Instructions
- Wash and prepare all of the fresh ingredients, as per instructions above. Make sure to wash the tomatillos very well to remove any sticky residue.
- Place the gazpacho ingredients into a high speed blender and blend on high until very smooth. Add a small amount of water if the gazpacho is too thick.
- Season with salt and pepper.
- In a bowl, whisk together the crema ingredients.
- Chill both the gazpacho and the lime crema in the refrigerator for at least an hour prior to serving.
- Serve the gazpacho with a dollop of the prepared crema and garnish with fresh basil and optional hemp hearts, if using. Enjoy!
