Spicy Peach Gazpacho with Lime Crema


It has been a hot, hot, HOT Summer. To combat the rising temperatures, we are making this cool and refreshing Spicy Peach Gazpacho with Lime Crema. A chilled soup is one of our favorite things during the summer.  Not only is it light and heathy but it also doesn’t heat up your home and that’s a win-win in our book!


Necessary Spicy Peach Gazpacho Ingredients

Here is what you will need to make this light seasonal gazpacho:

  1. Peaches – Sweet peaches are a nice contrast to the tangy lime and spicy jalapeño in this chilled summer soup.
  2. Cucumber – A mild addition but the cucumber provides necessary water for a tasty soup.
  3. Jalapeño – Here is where a little heat comes in. Feel free to up the ante with a hotter variety of pepper or to leave out if you prefer your gazpacho mild in flavor.  But we recommend a little heat for this slightly sweet vegan soup.
  4. Tomatillos – The green cousin of tomato.  Not only do they add a little acidity but they also allow the peaches to shine with a beautiful yellow hue to this gazpacho.
  5. Lime Juice – The lime provides a little tartness to this otherwise sweet soup.  Yum!
  6. Basil – A small but mighty ingredient! The basil brings freshness and it pairs so well with the peach.  We recommend reserving a few leaves for garnish as well.
  7. Agave Nectar – This is a sweetener for the soup but it can be left out if you prefer.  If your peaches are extra ripe and sweet, you can easily leave out or reduce the amount of agave.
  8. Olive Oil – This is a small put crucial ingredient.  It allows the gazpacho to emulsify or throughly blend together. It also provides smoothness and a little needed fat for an otherwise extremely light soup.

However, what you REALLY need to make this Spicy Peach Gazpacho with Lime Crema is a quality blender.  We just can’t speak highly enough about our Vitamix.  But any quality blender will work to take these raw veggies and fruit and purée them into a delightful summer soup.

There is no question about the expense of a high-quality blended but we have found ours to be well worth the investment.  Also, it can be a good idea to check out refurbished models because they can be like-new, but a fraction of the cost. But for following a plant-based diet, there really is nothing better than a Vitamix in our opinion.

Peaches are delicious on their own, but if you are looking for a fun new take on a chilled soup, give this Spicy Peach Gazpacho a try.  It can be made without the Lime Crema, but we love the combo of lime and peach. Bright, light, and invigorating!

Spicy Peach Gazpacho with Lime Crema

This chilled vegan peach soup is perfect for a hot summer day. Made with peaches, tomatillos, cucumber, lime, basil, jalapeño, and it also packs a punch!



5 Peaches (Pits Removed)
810 Tomatillos (Husks Removed)
1 Cucumber (Peeled)
1 Jalapeño (Stems and Seeds Removed)
3 Tbsp Lime Juice
1 Bunch Basil (Reserve a Sprig or Two for Garnish)
3 tsp Agave Nectar
2 Tbsp Olive Oil
Salt and Pepper to Taste
Hemp Hearts (For Garnish, if desired)

1/2 Cup Plain Non-Dairy Yogurt
2 Tbsp Lime Juice
1 tsp Agave Nectar


  1. Wash and prepare all of the fresh ingredients, as per instructions above. Make sure to wash the tomatillos very well to remove any sticky residue.
  2. Place the gazpacho ingredients into a high speed blender and blend on high until very smooth. Add a small amount of water if the gazpacho is too thick.
  3. Season with salt and pepper.
  4. In a bowl, whisk together the crema ingredients.
  5. Chill both the gazpacho and the lime crema in the refrigerator for at least an hour prior to serving.
  6. Serve the gazpacho with a dollop of the prepared crema and garnish with fresh basil and optional hemp hearts, if using. Enjoy!
