Turmeric Tempeh Skewers with Mango Relish

Description

Protein packed tempeh covered in an irresistible turmeric rub and topped with a fresh mango relish. This Incredibly nutritious plant-based protein that will have you coming back for more!


Ingredients

2 Bricks Tempeh (Cut into Rectangular Chunks)

Marinade:

1 Inch Grated Fresh Ginger

1 Piece Grated Fresh Turmeric

2 tsp Coriander Powder

1 tsp Ground Turmeric

1/2 tsp Cayenne Pepper

1/2 tsp Black Pepper

1/4 tsp Salt

1 Lime (Juiced)

Mango Relish:

1 Medium Mango (Diced Small)

1 Medium Red Bell Pepper (Diced Small)

1 Jalapeño (Diced Small)

1 Cucumber (Diced Small)

1 Bunch Fresh Cilantro (Chopped)

1/4 tsp Salt

1/2 tsp Black Pepper

1/2 tsp Garlic Powder

1 Lime (Juiced)


Instructions

 

  1. Preheat the oven to 450°F. Wash and prepare the fresh vegetables as per the directions above.
  2. In a large bowl, add all the ingredients for the mango relish and stir to combine. Set aside.
  3. In a small bowl, add the ingredients for the marinade and stir to combine.
  4. Prepare a baking sheet with parchment paper.
  5. Insert a skewer into each piece of tempeh. Make sure to insert far enough into the tempeh, so it feel secure.
  6. Using a spoon or basting brush, coat each skewered tempeh with the turmeric marinade and place each skewer onto the parchment paper lined baking sheet.
  7. Bake them for 25-30, flipping them halfway through.
  8. Serve immediately with a dollop of fresh mango relish and extra cilantro. Enjoy!
