Description
A decadent appetizer of Medjool dates stuffed with pecans and wrapped in savory carrot bacon– these Vegan Bacon Wrapped Dates are great for entertaining!
Ingredients

- 4 Carrots (Sliced Thin, Lengthwise)
- 24 Dates (Pitted)
- 24 Pecans Halves
- 3 Tbsp liquid aminos
- ½ tsp Liquid Smoke
- ½ tsp Garlic Powder
- ½ tsp Smoked Paprika
Instructions
- Preheat the oven to 350°F.
- Wash and prepare the carrots and remove the pits from the dates.
- Combine the liquid aminos, liquid smoke and dry spices in a small bowl and whisk to incorporate.
- Prepare a baking sheet with parchment paper and layer the carrot slices in a single layer. Use more than one prepared baking sheets if necessary. Brush the carrots on both sides with the marinade. Bake for 5 minutes.
- While the carrots bake, stuff each date with a pecan half (see picture).
- When the carrot “bacon” is cool to touch, wrap each date with “bacon” slice.
- Place each wrapped date on a parchment paper-lined baking sheet.
- Brush each date with the marinade and bake for 10 minutes.
- Serve with toothpicks and enjoy warm.
