Description

Fluffy and indulgent pancakes with a healthy twist. These Vegan Chocolate Chia Banana Pancakes are perfect for breakfast, lunch, or dessert!


Ingredients

  • 2 Bananas (Mashed)
  • 2 Cups Chocolate Soy Milk
  • 2 Tbsps Maple Syrup
  • 2 tsps Vanilla Extract
  • 1 tsp Apple Cider Vinegar
  • 1 1/2 Cups Flour (Gluten-Free if Needed)
  • 3 Tbsp Chia Seeds
  • 1 Tbsp Baking Powder
  • 1 tsp Salt
  • 1 tsp Cinnamon

Instructions

  1. Mash banana and add liquids. Stir to combine.
  2. Add dry ingredients to a large bowl mix to combine.
  3. Pour in wet ingredients and whisk to incorporate. Do not over whisk.
  4. Allow to sit for 10 minutes.
  5. Heat a skillet or griddle over medium heat. Pour 1/3 cup circles onto the griddle.
  6. Allow to cook until bubbles form on the top side and golden brown on the underside.
  7. Flip and allow to cook for 2-3 more minutes.
  8. Repeat until batter is finished.
  9. Plate and serve immediately with maple syrup.
  10. Leftovers can be refrigerated, covered, for up to two days.

Notes

  • These pancakes are extra indulgent when topped with vegan chocolate chips, chia seeds, banana slices, and toasted coconut if desired.
