Description
A copycat recipe of the famous DoubleTree Chocolate Chip Cookies that is also vegan and gluten-free. Delicious homemade cookies that everyone can enjoy!
Ingredients

Wet Ingredients:
2 Tbsp Flaxseed Meal
6 Tbsp Warm Water
½ lb Vegan Butter (2 sticks)
¾ Cup Light Brown Sugar
¾ Cup Coconut or Turbinado Sugar
1 ½ tsp Vanilla Extract
¼ tsp Lemon Juice
Dry Ingredients:
2 ¼ Cup Flour (Gluten-Free if Needed)
1 tsp Salt
1 tsp Baking Soda
1 Pinch Cinnamon
Additions:
½ Cup Oats
2 1/3 Cup Vegan Chocolate Chips
1 Cup Chopped Walnuts
Instructions
- Preheat the oven to 300°F.
- In a small bowl, combine the flaxseed meal and the warm water and allow to sit for 10 minutes.
- In a large bowl, combine the butter and both sugars and combine thoroughly.
- Next add the flax “egg” along with the vanilla and lemon juice, stir to combine.
- In a medium sized bowl, combine the dry ingredients.
- Slowly stir the dry ingredients into the wet ingredients. Being careful not to over mix.
- Finally, add the chocolate chunks or chips, oats, and walnuts and stir to combine.
- Dollop the dough onto parchment paper lined baking sheets and bake for 20 minutes.
- Allow the cookies to sit on the hot baking sheet for 1-2 minutes after removing from oven. Then move them to a cooling rack and repeat the process until you have used all of your dough.
