There is nothing better than a fresh ooey gooey chocolate chip cookie fresh from the oven. These Vegan DoubleTree Chocolate Chip Cookies are just as delicious as the original hotel classic but they are also dairy and gluten free. Woohoo!

 

The Secret Is OUT! (Thanks, DoubleTree!)

If you have ever stayed at a DoubleTree Hotel, you know about the incredible cookies that they give you when you check in.  YUMMM…. I still have memories from years ago!

Well, this past weekend the Hilton chain released their famous cookie recipe to the masses! Yep, and we just had to make a Vegan and Gluten-Free version. But don’t worry these are still OUT-OF-THIS-WORLD GOOD!

The secret ingredient is… Lemon juice! I know, we were shocked too! What a fantastic idea! We love chocolate chip cookies but I had never thought to include a smidge of citrusy lemon. It works spectacularly!

These Vegan DoubleTree Chocolate Chip Cookies are hardy and packed with chocolate. In fact, we decided to use chocolate chunks rather than traditional chips for even more chocolaty goodness. Mmmmm… Did I say, thank you DoubleTree?!

 

Delicious and Gluten-Free

Now these cookies are G.O.O.D.- no question about that! However, they are also surprisingly nutritious. Not only do they include heart healthy walnuts and oats, but this version is also free from gluten.

But not all gluten-free flour is considered equal. Our favorite for baking is Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. It has a combination of sweet white rice flour, whole grain brown rice flour, potato starch, whole grain sorghum flour, tapioca flour, and xanthan gum. The result is gluten-free flour that tastes and bakes like traditional all-purpose flour. Yes!!!

 

They’re Vegan Too!

But it doesn’t stop there… these decadent chocolate chip cookies are also VEGAN! No eggs or dairy necessary for these heavenly treats.

A simple mixture of flaxseed meal and water replaces the eggs in this recipe. Just be sure to let the flax “eggs” sit for at least 10 minutes so it sets and thickens for the proper consistency.

Vegan butter easily replace traditional butter and vegan chocolate chips are also exchanged. We love the brand Enjoy Life for the chocolate chips. They have a large selection of options including dark chocolate, semi-sweet, mini or regular chips, as well as chocolate chunks.

These cookies taste JUST like the classic, but hopefully everyone will be able to enjoy and indulge! Sometimes you just need a cookie!!

  • Can these chocolate chip cookies be made nut-free?

    • Yes. Just leave out the walnuts and opt for allergen-friendly chocolate chips such as the brand Enjoy Life. Their chocolate is free from the most common food allergies, including tree nuts, peanuts, and sesame.
  • Do you have to use fresh lemon juice?

    • Nope.  Feel free to use bottled lemon juice if you have that available. In fact, that’s more economical because you only need ¼ teaspoon of the lemon juice.
  • Do these cookies freeze well?

    • Absolutely.  If you need to make them in advance for an event, just freeze them and take them out the day of. Or if you want to spread out the cookie enjoyment, freeze some and take them out when you get a craving!

Description

A copycat recipe of the famous DoubleTree Chocolate Chip Cookies that is also vegan and gluten-free. Delicious homemade cookies that everyone can enjoy!


Ingredients

Scale

Wet Ingredients:

2 Tbsp Flaxseed Meal

6 Tbsp Warm Water

½ lb Vegan Butter (2 sticks)

¾ Cup Light Brown Sugar

¾ Cup Coconut or Turbinado Sugar

1 ½ tsp Vanilla Extract

¼ tsp Lemon Juice

Dry Ingredients:

2 ¼ Cup Flour (Gluten-Free if Needed)

1 tsp Salt

1 tsp Baking Soda

1 Pinch Cinnamon

Additions:

½ Cup Oats

2 1/3 Cup Vegan Chocolate Chips

1 Cup Chopped Walnuts


Instructions

  1. Preheat the oven to 300°F.
  2. In a small bowl, combine the flaxseed meal and the warm water and allow to sit for 10 minutes.
  3. In a large bowl, combine the butter and both sugars and combine thoroughly.
  4. Next add the flax “egg” along with the vanilla and lemon juice, stir to combine.
  5. In a medium sized bowl, combine the dry ingredients.
  6. Slowly stir the dry ingredients into the wet ingredients. Being careful not to over mix.
  7. Finally, add the chocolate chunks or chips, oats, and walnuts and stir to combine.
  8. Dollop the dough onto parchment paper lined baking sheets and bake for 20 minutes.
  9. Allow the cookies to sit on the hot baking sheet for 1-2 minutes after removing from oven. Then move them to a cooling rack and repeat the process until you have used all of your dough.
  10. Enjoy
