Description
A delicious recipe for baked orange coconut donuts that also happen to be vegan and gluten-free– Bursting with sweet orange flavor!
Ingredients
Donuts:
- 2 Flax Eggs (See below)
- 2 Cups Gluten Free Flour (We like Bob’s Red Mill GF Flour)
- 2 tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Salt
- ½ Cup Sugar
- 3 tsp Orange Zest
- 1 Cup Almond Milk
- 4 Tbsp Coconut Oil (Melted)
- 1 ½ tsp Orange Juice
Frosting:
- 1 ½ Cups Vegan Powdered Sugar
- 4 Tbsp Orange Juice
- 2 tsp Orange Zest
Topping:
- 2 Tbsp Toasted Coconut
- Additional Orange Zest (optional)
Instructions
- Preheat the oven to 375℉. In a small bowl, combine 2 Tbsp flax meal and 6 Tbsp water. Set aside for at least 5 minutes.
- In a frying pan, toast the coconut over medium heat for about 4 minutes or until it is beginning to brown.
- Using a citrus zester, remove the zest from the oranges and set aside. Then, juice the oranges and set aside.
- In a large bowl, combine the wet ingredient – Flax eggs, almond milk, Coconut oil, and orange zest. Whisk to combine.
- In a second large bowl, combine the dry ingredients of the donuts and stir to combine. Slowly Pour the wet ingredients into the dry ingredients and stir until there are no clumps. Be careful not to over mix.
- Coat your donut pan with a light layer of oil or cooking spray. Using a pastry bag, pipe the dough mixture into each donut mold, filling to the top.
- Bake for 15 minutes or until they are beginning to brown.
- Remove and allow to cool.
- In a small bowl, add the frosting ingredients and stir until well combined. Add additional orange juice, if desired.
- Immediately, dip the donuts one-by-one into the frosting, submerging halfway. Finally, sprinkle with the toasted coconut and additional orange zest. Enjoy!
