It’s Tarragon Time!
Tarragon has to be one of my favorite herbs. It’s aromatic and pairs so well with a variety of flavors. Typically it is used for egg and white meat recipes but we love using it with any and ALL vegetables!
But the best friend of tarragon, in my opinion, is lemon. The citrusy lemon provides brightness and the tarragon finishes each bite with an earthy licorice accent. Best friends bring out the best, and this recipe is no exception.
A Delicious Vegetable Side Dish
Vitamin packed green beans are the ideal veggie to pair with the lemon and tarragon. We love to lightly sauté our green beans to retain most of their vitamins and minerals and still provide a nice crunch. For this recipe, you simply need to sauté the beans in lemon juice and toss with lemon zest and tarragon once cooked.
Finally, in our opinion, these string beans needed a little extra protein and crunch. We added a handful of sliced almonds immediately before serving. Not only do the almonds add amazing flavor but this also provide an aura of elegance.

Description
This quick and easy side dish is vegan, gluten free, and oh-so-flavorful! Ready in 20 minutes, these delightful green beans are sure to become a family favorite.
Ingredients
½ lb Green Beans (Trimmed)
1 Lemon (Zested and Juiced)
2 Garlic Cloves (Minced)
1 Bunch Fresh Tarragon (Stems Removed, Leaves Minced)
½ tsp Black Pepper
¼ tsp Salt
Instructions
- Wash and prepare the ingredients as directed above.
- In a frying pan with 2 tsp of oil, sauté the garlic for 30 seconds on medium high heat.
- Add the green beans and cook, stirring frequently until the string beans begin to soften.
- Add the lemon juice and stir to combine. Continue to cook until the beans are cooked to your desired tenderness.
- Remove from the heat and add the lemon zest and tarragon. Stir to combine.
- Garnish with sliced almonds (optional) and enjoy!
