Description

A nutritious homemade recipe that replicates a takeout favorite- this Vegan Jackfruit Egg Roll in a Bowl is satisfying and guilt free!

Ingredients

Scale
  • 1 Tbsp Olive Oil
  • 1 20 oz Can Young Green Jackfruit in Brine (Drained and Shredded)
  • 1/2 tsp Ground Coriander
  • 1/4 tsp Ground White Pepper
  • 3 cups Cabbage (Shredded)
  • 2 Carrots (Julienned)
  • 4 Green Onions (Sliced, Greens and Whites Separated)
  • 3 Cloves Garlic (Grated)
  • 1 Inch Fresh Ginger (Grated)
  • 1/2 Cup Edamame (Shells Removed)
  • 2 Tbsp Liquid Aminos
  • 1 Tbsp Rice Vinegar
  • 1 Tsp Toasted Sesame Oil
  • 1 Tbsp Sesame Seeds (Garnish)

Instructions

  1. Prepare produce as directed above. 
  2. Add 1 Tbsp of olive oil to a large high-sided skillet or wok over medium-high heat. Add the shredded jackfruit and sauté for 3 minutes, stirring occasionally. Add the ground coriander and white pepper and cook for another 2 minutes, continuing to stir. 
  3. Next, add the shredded cabbage, carrots and the whites of the sliced green onion. Stir occasionally and allow to cook for 2 minutes. 
  4. Add the ginger, garlic, green part of the onions along with the liquid aminos, rice vinegar, sesame oil and edamame. Stir occasionally and allow to cook for 5 minutes.
  5. Top with sesame seeds (optional) and serve immediately. Enjoy!
  6. Refrigerate leftovers in an airtight container in the refrigerator for up to 5 days.
