Ingredients
- 1 Tbsp Olive Oil
- 1 20 oz Can Young Green Jackfruit in Brine (Drained and Shredded)
- 1/2 tsp Ground Coriander
- 1/4 tsp Ground White Pepper
- 3 cups Cabbage (Shredded)
- 2 Carrots (Julienned)
- 4 Green Onions (Sliced, Greens and Whites Separated)
- 3 Cloves Garlic (Grated)
- 1 Inch Fresh Ginger (Grated)
- 1/2 Cup Edamame (Shells Removed)
- 2 Tbsp Liquid Aminos
- 1 Tbsp Rice Vinegar
- 1 Tsp Toasted Sesame Oil
- 1 Tbsp Sesame Seeds (Garnish)
Instructions
- Prepare produce as directed above.
- Add 1 Tbsp of olive oil to a large high-sided skillet or wok over medium-high heat. Add the shredded jackfruit and sauté for 3 minutes, stirring occasionally. Add the ground coriander and white pepper and cook for another 2 minutes, continuing to stir.
- Next, add the shredded cabbage, carrots and the whites of the sliced green onion. Stir occasionally and allow to cook for 2 minutes.
- Add the ginger, garlic, green part of the onions along with the liquid aminos, rice vinegar, sesame oil and edamame. Stir occasionally and allow to cook for 5 minutes.
- Top with sesame seeds (optional) and serve immediately. Enjoy!
- Refrigerate leftovers in an airtight container in the refrigerator for up to 5 days.
