A Rich & Flavorful Marinade

Gremolata is an Italian green sauce that typically accompanies veal. This easy to make sauce features chopped parsley, lemon zest, and garlic. 

Although this sauce can quickly be made in minutes, it provides incredible flavor and necessary oil for roasting a whole cauliflower. 

However, we recommend reserving a little to add after roasting. This provides an extra zip of tangibles that blends perfectly with the creamy hummus and rich tahini

Although the cauliflower is delicious on its own, when it is served over a bed of creamy garlic hummus, this simple vegetable is transformed into a gorgeous entree. Best yet, the hummus also adds protein so a slice truly feels like an entree rather than a healthy side dish.

  • Can another herb be used in place of the parsley

    • Yes, although then you technically won’t be making Gremolata. However, basil or cilantro would also compliment the roasted cauliflower nicely and pair well with the lemon zest and garlic. 
  • What is the best way to serve the whole roasted cauliflower? 

    • Due to the wow factor, we suggest cutting it immediately before serving. It may look a little messy on the plates, but it will taste absolutely divine. Additionally, serving it alongside a fresh green salad and maybe some pita or bread rounds out this meal splendidly. 
  • Tip: Reserve some of the Gremolata for garnishing

    • We recommend saving a little of the gremolata sauce to use after the cauliflower is roasted. The vibrant green adds a beautiful pop of color and additional zesty flavor. 
  • Tip: Time Saver

    • To save a little time when cooking, we recommend removing some of the cauliflower core by cutting up into the center of the veggie from the bottom, thus keeping the florets intact. About 1-1.5 inches will suffice and result in a more tender cauliflower.

Ingredients

Scale
  • 1.5 Cups Fresh Parsley (Roughly Chopped)
  • 1 Lemon (Zest)
  • 1/2 Lemon (Juice)
  • 2 Cloves Garlic (Peeled)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 Cup Olive Oil
  • 1 Medium Cauliflower
  • 1 Cup Hummus (Garnish)
  • 2 Tbsp Tahini (Garnish)
  • 1/4 Cup Raw Cashews (Chopped, Garnish)

Instructions

  1. Preheat the oven to 400°F
  2. Gremolata: Place the parsley, lemon zest, lemon juice, garlic, salt, pepper and olive oil into a food processor and run on medium until well combined. Transfer to a bowl and set aside. 
  3. Remove the leaves from the cauliflower and cut off the stem. 
  4. Place the cauliflower onto a parchment paper lined baking pan and cover liberally with the gremolata. 
  5. Bake for 45 minutes or until tender. 
  6. Spoon hummus onto a serving dish and carefully place the roasted cauliflower on top. Top with a drizzle of tahini and chopped cashews. 
  7. Slice into wedges to serve immediately. Enjoy! 
  8. Leftover cauliflower can be stored in an airtight container in the fridge for up to 5 days.
