Description
An easy meat-free nacho that will satisfy everyone! Tortilla chips with hearty jackfruit and black beans covered in a creamy cashew nacho cheese sauce. Heaven in a one-skillet meal!

1 Red Onion (Diced)
1 18 oz. Can Young Jackfruit (Shredded)
2 Tbsp Taco Seasoning
½ 15 oz. Can Black Beans
Tortilla Chips
Vegan Nacho Cheese
Vegan Sour Cream (Garnish)
Salsa (Garnish)
2 Green Onions (Chopped for Garnish)
Tomatoes (Chopped for Garnish)
1 Jalapeño (Sliced for Garnish)
1 Bunch Fresh Cilantro (Rough Chopped for Garnish)
Lime Wedges (Garnish)
Instructions
- Prepare all fresh produce as directed above.
- Preheat the oven to 400°F.
- In an oven safe skillet, sauté the onion with a small amount of oil over medium heat for 2-3 minutes.
- Add the shredded jackfruit and the taco seasoning to the skillet. Cook for an additional 2 minutes stirring to combine. Finally stir in the black beans and cook for 1 more minute to warm them. Remove from heat.
- Transfer the jackfruit mixture to a bowl and carefully wipe out the skillet. No need to wash.
- Fill the bottom of the skillet with tortilla chips and then top with the jackfruit and black bean mixture.
- Place the skillet into the oven for 5-10 minutes depending on how browned you want your chips and topping.
- Remove from the oven and immediately top with “cheese”, salsa, and vegan sour cream, if using.
- Finally, garnish with green onion, jalapeño slices, tomato and cilantro, if desired.
- Serve immediately and enjoy!
