Vegan Jackfruit Skillet Nachos

 

Hello Meatless Monday! This easy meal is meat-free and simply marvelous. Get ready for Vegan Jackfruit Skillet Nachos. BOOM!

 

Easy Breezy One-Pot Meal

There is nothing better than a meal that can be made with minimal clean-up necessary.  These nachos are made in a cast-iron skillet which easily transfers from the stovetop to the oven for baking.

First, the jackfruit and black bean combo are sautéed with chopped onion and taco seasoning. The mixture doesn’t have to be cooked, but it allows for the seasoning to be better incorporated and gives the jackfruit a “meaty” texture.

Once it is slightly browned and all of the moisture has evaporated, the jackfruit mixture is ready for layering! Remove the mixture and add your tortilla chips to the bottom of the skillet. No need to clean it!

Then, top the chips with the jackfruit and black beans and it’s ready to be “cooked!” Did I say this was simple?!

 

Easily Customizable  

The great thing about these Vegan Jackfruit Skillet Nachos is that they are easily adapted for all tastes and preferences. The toppings are up to you!

But one thing I wouldn’t skip is the CHEESE! I mean, nachos aren’t nachos without nacho cheese sauce, right?!

We made this creamy cashew cheese which comes together in 5 minutes of blending. Yummmm! But if you prefer store-bought, dairy-free cheese can be used instead or even regular cheese. These nachos will satisfying no matter which cheese is used!

After the cheese, the rest is up to you.  But here are some of our personal favorites…

  • Salsa Verde or Salsa
  • Tofu Sour Cream
  • Chopped Green Onion
  • Diced Tomato
  • Fresh Jalapeño
  • Cilantro
  • Hot Sauce

SO MANY OPTIONS!!! We also love to add fresh avocado or a lime wedge for serving. Go crazy or basic, it’s up to you or maybe your family members! 😉

 

Time for Purging the Pantry!

These are difficult times. No doubt about it. We hope that you are doing well and that your loved ones are healthy and safe.

However, even if everyone in your household is healthy, it can be difficult to shop safely during this pandemic. Fortunately, this recipe allows for one to mix things up according to what you already might have on-hand.

Here are some other substitution ideas if you don’t have the exact ingredients available right now:

  • No Jackfruit?

    • Swap the canned jackfruit for crumbled tofu or tempeh and prepare it the same way.
    • Use only black beans or another bean of your choice.
    • Try chopped walnuts or cooked lentils.
  • Don’t have tortilla chips?

    • Try Totchos (Tater tot nachos!) or French fries for a base.
    • Substitute for another chip variety such as corn chips. Hello Fritto pie!
    • Serve over rice for a scrumptious burrito bowl.
    • For a healthier version, serve over a bed of lettuce for a delicious taco salad!

  • Can the cheese be baked with the jackfruit mixture?

    • Yep! If you are using store-bought, you should definitely melt it in the oven with the chips and faux meat mixture. Additionally, you can also bake a homemade cashew cheese, it will brown slightly and still tastes incredible.
  • Can it be made in advance?

    • Yes. In fact, we would highly suggest doing some meal prep in advance particularly if you plan to make most of your toppings from scratch. You can easily make the jackfruit mixture, cashew cheese, tofu sour cream, or even salsa in advance. Simply make them and refrigerate until ready to use. Plus they can be used for countless other Mexican recipes.
    • However, we would recommend cooking your nachos immediately before serving. It will probably only take 5-10 minutes tops to put them together and bake if everything else is pre-made. So easy!
  • Does it keep well?

    • Absolutely.  Although it best to only make what you plan to eat regarding the chips (No one likes soggy chips!). Everything else can be stored separately and reheated when needed. We suggest mixing things up, but having another Mexican meal for the leftovers such as tacos, quesadillas, or burrito bowls.

Description

An easy meat-free nacho that will satisfy everyone! Tortilla chips with hearty jackfruit and black beans covered in a creamy cashew nacho cheese sauce. Heaven in a one-skillet meal!


Ingredients

Scale

1 Red Onion (Diced)

1 18 oz. Can Young Jackfruit (Shredded)

2 Tbsp Taco Seasoning

½ 15 oz. Can Black Beans

Tortilla Chips

Vegan Nacho Cheese

Vegan Sour Cream (Garnish)

Salsa (Garnish)

2 Green Onions (Chopped for Garnish)

Tomatoes (Chopped for Garnish)

1 Jalapeño (Sliced for Garnish)

1 Bunch Fresh Cilantro (Rough Chopped for Garnish)

Lime Wedges (Garnish)


Instructions

  1. Prepare all fresh produce as directed above.
  2. Preheat the oven to 400°F.
  3. In an oven safe skillet, sauté the onion with a small amount of oil over medium heat for 2-3 minutes.
  4. Add the shredded jackfruit and the taco seasoning to the skillet. Cook for an additional 2 minutes stirring to combine. Finally stir in the black beans and cook for 1 more minute to warm them. Remove from heat.
  5. Transfer the jackfruit mixture to a bowl and carefully wipe out the skillet. No need to wash.
  6. Fill the bottom of the skillet with tortilla chips and then top with the jackfruit and black bean mixture.
  7. Place the skillet into the oven for 5-10 minutes depending on how browned you want your chips and topping.
  8. Remove from the oven and immediately top with “cheese”, salsa, and vegan sour cream, if using.
  9. Finally, garnish with green onion, jalapeño slices, tomato and cilantro, if desired.
  10. Serve immediately and enjoy!
