A quick & easy plant-based side that’s indulgent yet healthy. These vegan parmesan skillet green beans make the perfect accompaniment to any meal!
Ingredients

- 2 Tbsp Pine Nuts (Toasted)
- 2 tsp. Olive Oil
- 2 Large Shallots (Peeled and Sliced Thin)
- 2 Cloves Garlic (Minced)
- 1 1/2 lb Green Beans or Wax Beans (Trimmed if necessary)
- 1 Tbsp Vegan Parmesan (Garnish)
- 1/4 tsp Salt
- 1/4 tsp Pepper
Instructions
- Place the pine nuts in a dry skillet over medium heat. Stir frequently until nicely browned on all sides. Approx. 3 minutes. Remove from heat and set aside.
- Pour 2 tsp of oil into the skillet and add the sliced shallots. Over medium heat, stir the shallots frequently until they are turn deep brown but not burned.
- Next, add the green or wax beans, garlic, and 2 Tbsp of water to the skillet and cover immediately.
- Allow the mixture to steam for 2-3 minutes. Uncover and stir the beans into the caramelized shallots. Season with salt and pepper if desired.
- Finally, garnish with the toasted pine nuts and grated parmesan.
- Serve immediately and enjoy!
- Leftovers can be refrigerated in an airtight container for up to 5 days.
