Green beans by any other name (string, wax, Haricots Verts) are one of Summer’s splendors and this decadent plant-based side allows the beans to shine while adding loads of savory flavor. These Vegan Parmesan Skillet Green Beans are sure to be the favorite item on the plate no matter what they are served alongside!

 

A HEALTHY YET INDULGENT SIDE DISH

We love green beans.  We’ve made Blistered Gochujang String Beans and Lemon Tarragon Green Beans and now it’s time for Vegan Parmesan Skillet Green Beans!

First, notice that even in our small household we can’t stick to a name. Steve grew up with string beans and my Mom cooked green bean casserole often. But whatever you call these crunchy beans, they are often a household favorite. Therefore, we just had to share another great way for quickly cooking this seasonal veggie.

The key to this recipe is indulgent extras, specifically pine nuts, shallots, and vegan parmesan. The shallots are caramelized into a sweet and savory addition and the pine nuts are toasted for rich buttery flavor. Add a little salty parm and you have one amazing side. No need to sacrifice flavor in order to have a healthy vegetable side!

 

WHAT YOU WILL NEED:

  • Green Beans or Wax Beans  The main event! Any bean will work but we love the colorful mix of wax beans with the green beans.
  • Pine NutsThis nut brings big flavor. The pine nuts are naturally rich but once toasted, their buttery flavor is multiplied.
  • Shallots – The delicate shallot is caramelized for a sweet addition that perfectly complements the crunchy snap beans.
  • Garlic – Not only will the garlic provide aroma but it also gives a tanginess to the sweet shallot.
  • Vegan Parmesan – A little salt from the parmesan is just what this decadent side needs.  You can just either store-bought (we recommend Violife) or you can use homemade Vegan Pepita Parmesan.
  • Salt & Pepper – With all of the flavor already occurring, just a touch of salt and pepper is required to bring out the natural seasonings in this heavenly side.

 


 

FAQ & VEGAN PARMESAN SKILLET GREEN BEAN TIPS:

  • IS THERE A SUBSTITUTE FOR THE SHALLOTS? 

    • Yes. Any variety of onion will work but we prefer the subtleness of the shallot for this recipe.
  • DO YOU NEED TO ADD OIL WHEN TOASTING THE PINE NUTS? 

    • Nope! Simply put the pine nuts in the pan and their natural oil will suffice. Heat them over medium heat until golden brown and fragrant.
  • ARE THESE GREEN BEANS GLUTEN FREE?

    • Yup.  These skillet green beans are naturally gluten-free.
  • TRY NOT TO OVERCOOK THE BEANS. 

    • These green beans are best when their natural flavor and crispiness are retained. By essentially steaming them in the pan, there flavor will still shine and their bright green hue.

Description

A quick & easy plant-based side that’s indulgent yet healthy. These vegan parmesan skillet green beans make the perfect accompaniment to any meal!


Ingredients

Scale
  • 2 Tbsp Pine Nuts (Toasted)
  • 2 tsp. Olive Oil
  • 2 Large Shallots (Peeled and Sliced Thin)
  • 2 Cloves Garlic (Minced)
  • 1 1/2 lb Green Beans or Wax Beans (Trimmed if necessary)
  • 1 Tbsp Vegan Parmesan (Garnish)
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. Place the pine nuts in a dry skillet over medium heat. Stir frequently until nicely browned on all sides. Approx. 3 minutes. Remove from heat and set aside.
  2. Pour 2 tsp of oil into the skillet and add the sliced shallots. Over medium heat, stir the shallots frequently until they are turn deep brown but not burned.
  3. Next, add the green or wax beans, garlic, and 2 Tbsp of water to the skillet and cover immediately.
  4. Allow the mixture to steam for 2-3 minutes.  Uncover and stir the beans into the caramelized shallots. Season with salt and pepper if desired.
  5. Finally, garnish with the toasted pine nuts and grated parmesan.
  6. Serve immediately and enjoy!
  7. Leftovers can be refrigerated in an airtight container for up to 5 days.
