There are some recipes that we refer to as “kitchen staples.” These are the things that we ALWAYS have on-hand. This Vegan Pepita Parmesan is frequently used on almost every dish we make and it’s always in our fridge- it’s definitely one of our kitchen staples.
Prior to becoming plant-based we worried about finding a substitute for cheese, particularly grated parmesan cheese. But then we realized, vegan “cheese” might not be exactly the same but it is terrific in its own right. It’s salty, nutty, and has a slight tanginess- yep, CHEESE in my book!
However, we have tried various versions of parmesan and THIS pepita parmesan wins in my opinion! There is just something extra that the pumpkin seeds bring to the table.
Now the great thing about this vegan parmesan is that it can easily be whipped up in LESS than 5 minutes! All you need is 4 ingredients-
1. Raw pepitas (pumpkin seeds)
2. Nutritional yeast
4. Garlic powder
Yep! That’s it. Simply put those 4 things into a high speed blender and blend for about 1 minute. And, DONE!
Clearly, this Vegan Pepita Parmesan is remarkably easy but it is also DELICIOUS! It can be sprinkled on almost everything. YUM, YUM, and YUM!
But probably the BEST part?… It has such a long shelf life. Simply put it in a small glass container or ziploc baggie and store in your fridge. It lasts up to a month but I will be honest, we have never thrown ANY out. Somehow we always go through it, and then we make some MORE!
Go ahead, take 5 minutes and whip up this Vegan Pepita Parmesan. You will be so glad you did!… More “cheese” please!
- 1 Cup Raw Pepitas (No Shell Pumpkin Seeds)
- 3 Tbsp Nutritional Yeast
- ¼ tsp Salt
- ¼ tsp Garlic Powder
- Gather all of the ingredients and place them into a high speed blender.
- Blend on high for about 1 minutes, or until a course powder is formed. There will still be some larger granules.
- Enjoy on all of your favorite dishes including pasta, soup, salads, and MORE!
