Healthy Baked Falafel

Falafel.  What is there not to absolutely love about these flavorful patties? Before this recipe, I had never made them before from scratch. The only time I would get them was from food trucks, but that always left me wondering about the exact ingredients that I was eating. And honestly, a little nervous.

This recipe is super easy and it has minimal ingredients, AND… they taste amazing. Just the simplicity of this recipe would have been enough for me to make these on a regular basis, but the reality is they are amazing and bursting with flavor. Pair them with your favorite hummus and tahini and you will have a spectacular meal.

We like to eat them on a platter full of fresh ingredients, but sometimes we also put them inside a pita and have it as a falafel sandwich.  Whatever way you decide to serve these tasty baked falafels, you will be in heaven.  Plus, then you can save your money for the Cinnamon Snail food truck’s donuts.  😉

Ingredients
  • 1 Cup Dried Beans (Soaked Overnight)
  • ½ Onion (Chopped)
  • 3 Cloves of Garlic (Chopped)
  • ½ Cup Packed Fresh Parsley
  • ½ Cup Packed Fresh Dill
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • ½ tsp Red Pepper Flakes
  • ½ tsp Salt
  • ½ tsp baking powder
  • Olive oil
Instructions
  1. Rinse the dried beans and soak them in a large bowl of water overnight. Also, the water level should be at least 1-2 inches above the beans.
  2. The following day…Preheat the oven to 375 degrees. Wash and prepare all fresh produce and herbs.
  3. In a food processor add the drained beans along with the rest of the ingredients excluding the oil.
  4. Process the mixture until it is well combined but not overly puréed. It should be very small pieces of each ingredient. See photo if needed.
  5. Coat a baking sheet with a light layer of olive oil. Using your hands press about 1 ½ Tbsp of the mixture into a flat patty and place it on the baking sheet. Do this with the rest of the mixture until all the falafel patties have been formed. You should be able to make about 12 patties.
  6. Before baking the falafel, brush the top of each one with a little olive oil. Bake them for 20 minutes, flip them over and bake for an additional 10-15 minutes or until brown.
  7. Serve while warm with your choice of condiments.
  8. Enjoy!
